After years of tweaking different banana bread and muffin recipes, we have found the perfect one! These muffins are super enough that your little ones can help out. My 7 year old now only needs a little guidance from me. These are perfect for school lunches, after school snacks or playdates. You can bake these in bulk and freeze them too.
Preheat Oven to 350 degrees Fahrenheit
5 ripe bananas
1/2 cups melted butter
1 egg (beaten)
3/4 cup of sugar
1 teaspoon vanilla extract
1 teaspoon baking soda
pinch of salt
1 1/2 cups of flour
Spray your muffin tins or place cupcake liners in muffin tin
Mash your bananas and then add in your melted butter
Slowly add sugar, egg and vanilla. Mix well.
Sprinkle in baking soda and salt.
Slowly add flour, 1/4 cup at a time
Fill muffin tins 3/4 of the way full
Bake for 30 minutes
Let cool on a wire rack
